Remove the rind from the Gorgonzola cut into thin slices as for raclette cheese, place into the raclette pans, and sprinkle with grated Parmesan. When the cheese is golden and bubbly pour it over peeled boiled potatoes. To compliment this dish serve dried meats and a dry white wine. |
