| Prepare the different accompanying dishes. Sauces(as for fondue bourguignonne) Créole Rice, Salad.
To taste: - Chips, buttered vegetables. Heat the block to a temperature of 250° Celsius; any method of heating is suitable, although an oven is preferable. At the moment of serving grill the meat in the following manner. Cut into rough cubes, place on the skewers of the preheated suspended block. Garnish with meat which has been flambéed at the table, for this purpose use brandy, whiskey etc which has been preheated. With the aid of a fork remove one or two pieces of meat at a time from the gibbet, ensuring that the remaining pieces are kept warm. |
