For 6 people Cut thin slices of different meats; place them in a mixing bowl together with salt, vinegar and shallot vinegar. In another recipient mix the chicken stock with 25cl of wine and the cloves. Cook the meat, at the moment of serving spoon the stock over the meat. - Veal kidneys : 250 grs
- Sirloin steak : 250 grs
- Loin of Veal : 250 grs
- Calf liver : 250 grs
- Filet of pork : 250 grs
- Salt
- Pepper
- Vinegar with the échalotte
- Chicken stock : 25 cl.
- Wine red : 25 cl.
- Clove : 5
